Within the centuries-old stone walls, you can feel the history of the land – from the life of the shepherds to the legends surrounding the prehistoric menhirs of Cauria. The man behind the new development, Paul Canarelli, a descendant of a Corsican family, has created a living monument with great passion, preserving tradition while embodying modern luxury. Sustainability and culinary diversity – from farm to table
Organic farming is at the heart of the ‘domaine’. There is no place for pesticides or industrial methods on the extensive estate. Instead, a large organic vegetable garden supplies the estate’s three restaurants with fresh, seasonal ingredients. Over 250 beehives produce honey, while the estate also keeps its own livestock, including Corsican cattle and sheep, with a view to ensuring the highest quality. Solar energy, composting and recycling are firmly integrated into everyday life – Murtoli is a model for environmentally conscious luxury travel.
Murtoli’s cuisine is characterised by regionality and sophistication. The three restaurants – La Ferme, La Grotte and the Beach Club – serve seasonal Corsican cuisine made with produce from their own gardens. Chef Laurent Renard transforms meat, vegetables, honey, cheese and seafood into refined dishes that enchant the palate and allow diners to taste the connection to the region. Here, farm-to-table becomes a true art form.
